Strawberry and Grilled Chicken Salad

A Lovely sweet but savory salad that's really healthy but also quite filling.


  • 1 Head Romaine lettuce roughly chopped
  • 1.5 cups strawberries quartered
  • 1/4 cups goat cheese
  • 1/4 cups walnuts
  • 1 pound grilled chicken
  • 2 tbsp balsamic vinegar
  • salt to taste
  • For the grilled chicken:
  • 3 tbsp fresh lemon juice
  • 2 tbsp extravirgin olive oil
  • 2 garlic cloves, minced
  • 1/2 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • Cooking spray


  1. For the grilled chicken:
  2. Prepare grill to medium-high heat.
  3. Combine the lemon juice, olive oil, garlic, and chicken in a large plastic zip-loc bag. Seal.
  4. Marinate in the fridge for 30 minutes, turning occasionally.
  5. Remove chicken from the bag.
  6. Sprinkle chicken with salt and pepper.
  7. Place chicken on grill rack coated with cooking spray.
  8. grill 6 minutes on each side or until done.
  9. For the salad:
  10. Chop the lettuce roughly, strawberries, and grilled chicken.
  11. Add all ingredients in a large bowl and mix thoroughly.
